About four years ago, Happy Girl Kitchen Co. owner Jordan Champagne saw a sea change in the culinary workshop and cooking class business she had been operating since 2007 in Pacific Grove. Her focus had always been on healthy eating, but this awakening took things to a new level and an expanded audience.
“That was the first time that we had people attending our workshops saying their doctors had prescribed a plant-based diet, and so they wanted to learn more,” Champagne said. “Almost always health and compassion are big motivators for learning more about plant-based. So many people are making the shift now and want the skills to eat healthy and from scratch.”
